Ingredients: 1/2 lb. Dolly Varden (Charr) 2/3 cup fresh lime juice 1/3 cup each finely chopped red pepper and Spanish Onion 1/2 tsp. red chilli paste or 1 chopped jalapeno 1 tomato, seeded & chopped 1/2 cucumber, peeled, seeded and chopped 1/4 cup sliced radishes, optional 1/3 cup plain yoghurt 2 tbsp. chopped fresh chives Directions:Cut charr into 1/2 inch cubes. Combine lime juice, red peppers, onion and red pepper paste; stir in charr. Cover and refrigerate 6 hours or overnight, stirring occasionally. (During this marinating time, the acid in the lime juice acts to 'cook' the fish, which gradually becomes opaque.) To serve, drain Marinate and discard. Toss tomatoes, cucumbers and radishes, if using with yoghurt and chives; adjust seasoning to taste with salt and pepper. Add drained fish-vegetable mixture, tossing just until blended. |
