Ingredients: 2 seedless cucumbers 1 cup plain yogurt Generous handful fresh mint leaves Pinch of salt and of black pepper
Directions:1. Wash the mint leaves and shake them dry. Strip the leafy part away from their stalks, and then chop the leaves finely. 2. Peel the green skin off the cucumber, then cut it into slices lengthways. If less bitterness is desired, remove the "seeds" down the center with a spoon. Cut the slices into strips and chop into bite-size chunks. 3. Whisk the yogurt in a bowl until it is smooth. Stir in the cucumber and mint and season with salt and pepper to taste. 4. For a thinner dish, add more yogurt. For a thicker dish, add more cucumber. |
