Ingredients: 2 shallots, peeled and minced 1/2 cup dry white wine 1/4 cup white wine vinegar 1 cup mayonnaise 1/4 cup chopped fresh parsley 3 tablespoons chopped fresh tarragon 1/4 cup chopped fresh dill Generous dash Tabasco sauce 1 teaspoon Dijon mustard Directions:In a small non-aluminum saucepan, boil together the shallots, wine, and vinegar until the liquid is reduced to 1/4 cup. Cool. Whisk into the mayonnaise along with the herbs, Tabasco, and mustard. Chill until ready to serve. Makes about 1-1/4 cups. |
