Ingredients: 3 cups chicken breast (about 2 lbs.), cooked & cooled 3/4 cup celery, chopped 20 oz pineapple chunks in water, drained 11 oz mandarin oranges, drained 3/4 cup seedless grapes, cut in half 1/4 cup pecans, chopped 1/8 teaspoon salt 3 1/2 tablespoons mayonnaise
Directions:Toss the chicken pieces, celery, grape halves, pineapple, oranges, and 1/2 the pecans together. Fold in the salted mayonnaise. Chill (overnight if needed). Serve on lettuce leaves. Garnish with remaining pecans and some grapes. |
