Ingredients: 6 potatoes 1/3 cup beef broth 2 tbs. canola oil 1 lb. smoked sausage, sliced thin 1 chopped onion 1 chopped bell pepper 1/2 tsp. garlic powder 1/3 cup red wine vinegar 1/2 tsp. salt 1/8 teaspoon black pepper 1/2 tsp. cayenne pepper 1/2 tsp. paprika Directions:Cook potatoes, unpeeled in boiling salted water until tender. Drain and remove skins. Cut potatoes into bite-sized pieces, cover to keep warm and set aside. In a large frying pan, heat oil over medium heat. Add sliced sausage. Stir frequently until lightly browned. Remove sausage from pan and add to potatoes. Place onion and bell pepper into pan. Cook over medium heat for about 2 to 3 minutes. Add garlic powder, vinegar, broth, cayenne, salt, and pepper. Cook until mixture boils and then cook 1 minute more. Pour onion and pepper mixture over potatoes and mix lightly. Sprinkle top with paprika. |
