Ingredients: 1 cup cooked black beans 1/4 small diced red onion 1/4 cup minced fresh cilantro 1 tablespoon rice wine vinegar 1 teaspoon soy sauce 1 teaspoon Chinese hot oil 1/8 teaspoon asian sesame oil 1 pound asparagus 4 lettuce leaves Directions:1. Place cooked beans in 1-Qt mixing bowl. Stir in red onion, cilantro, vinegar, soy sauce, hot oil, and sesame oil into beans. Marinate for 20-30 minutes. Slice asparagus on the diagonal. Steam about 8 minutes. cool, and stir in with bean mixture. 2. Wash and dry lettuce leaves. To serve, place each leaf on a chilled salad plate. Place 1/4 the salad mixture on each lettuce leaf. |
