Ingredients: 6 cups chopped endives 1 cup walnut pieces 1 cup chopped apple 1/4 cup diced celery Dressing: 2 tablespoons tahini 1/2 cup vegetable oil 1 teaspoon prepared mustard 1/4 cup brown rice vinegar 2 tablespoons dark barley miso Grated carrot Directions:Wash endive, and spin dry. Shred or chop. Chop walnuts, apples and dice celery. Combine all the dressing ingredients and whisk. Combine all the salad ingredients, pour over dressing just before serving. Garnish with grated carrot or pumpkin seeds. |
