Ingredients: 1 1/4 cups boiling water 1 cup instant brown rice (Uncle Ben's) 4 medium red apples, diced (do not peel) 2 tablespoons lemon juice (fresh, or frozen Minute Maid) 2 tablespoons apple juice concentrate 3 celery ribs, thinly sliced (1 1/2 cup) 1/2 cup chopped pecans 1/2 cup raisins 1 cup plain nonfat yogurt 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg 1/4 teaspoon allspice Directions:Add rice to the boiling water. Turn to lowest heat; cover and simmer for 10 minutes. While it cooks, chop the apples in a serving bowl and add lemon juice to coat the apples. Add the remaining ingredients, including the cooked rice; stir well. Serve immediately or chill for later. |
