Ingredients: 1 large cucumber, peeled 1 (1 to 1 1/2 lb) jicama 1/2 c thinly slivered mild red onion 2 T lime juice 1/2 t grated lime peel 1 clove minced garlic 1/2 t salt 1/8 t red pepper flakes 3 T olive oil (or vegetable oil) leaf lettuce additional lime wedges and slivered red onion for garnish Directions:Seed cucumber and slice. Peel and slice jicama (bite sized). Toss jicama with onion and cucumber, set aside in refrigerator. Combine lime juice, lime peel, garlic, salt and pepper, whisk in oil until blended. Add dressing to cucumber-jicama mixture and toss to coat. Serve in lettuce-lined bowl and garnish with additional onion and lime wedges. |
