Ingredients: 2 cups cottage cheese 1 tsp. salt 3 tsp. lemon juice 1 cup light cream Directions:Soak gelatin in milk and melt over hot water. Add the salt and lemon juice to the cottage cheese and blend thoroughly, add little to the melted gelatin and fold all together with the whipped cream. Add to an eight-inch ring mold and chill in the refrigerator. Turn the cheese ring onto a large plate and fill the center with mixture of salad greens, finely sliced green peppers, two tomatoes cut in quarters which have been marinated in a chiffonade dressing. This is also delicious served with a mixed fruit salad. |
