Ingredients: 1 pound dandelion greens 1/4 pound soft, fresh goat cheese, cubed 1/2 cup diced red onion 2 tablespoons red wine vinegar 2 tablespoons walnut oil 1/2 teaspoon sugar 4 tablespoons coarsely chopped walnuts
Directions:1. Wash greens well. Dry. Cut off stem bases. Cut each stalk into bite-size pieces. Sprinkle with cheese and onions. 2. In small, nonreactive saucepan, combine vinegar, oil and sugar. Bring to boil. 3. Pour over salad and toss slightly. Sprinkle with walnuts. |
