Fried plaice with basil
Ingredients:
4 small plaice
flour
salt and pepper
butter for frying
finely chopped basil
lemon

Directions:
Salt the cleaned fish in a little salt for 10 minutes. Wipe fish off with kitchen towel and dip in seasoned flour. Brown the fish on both sides until flesh is firm but tender. Put fish in warmed oven dish. Put basil on the warm frying pan with a knob of butter and leave until butter has browned lightly. Pour half over the fish and serve the rest with the dish. Serve with potatoes and lemon wedges. A salad would suit this dish if desired.
