Pepper nuts
Ingredients:
4 1/8 cups (500 g) flour
8 oz. (250 g) butter
1 3/4 cups (350 g) sugar
2 eggs
1 teaspoon (5 ml) baking powder
1/2 teaspoon (2.5 ml) cinnamon
1/2 teaspoon (2.5 ml) cardamom
lemon peel, freshly grated (use only yellow part)

Directions:
1. Mix everything together and knead until smooth (add a little water if necessary).
2. Roll into rolls about 0.4 inch (1 cm) thick.
3. Cut the rolls into 0.3 inch (7 mm) thick pieces.
4. Arrange a layer of cookies on a greased cooking plate with a little space between them.
5. Bake the cookies on the middle rack of the oven at 392 deg. F (200 deg. C) for about 10 minutes (they are supposed to be somewhat hard and crunchy once they cool down).
