Squash cake
Ingredients:
200 ml oil
3 eggs
250 g sugar
350 g white flour
2 tsp vanilla sugar
2 tsp powdered cinnamon
1 tsp baking soda
4 tsp baking powder
1 tsp salt
50 g chopped walnuts
100 g raisins
lemon zest
4 squash
Icing:
icing sugar
lemon juice
water
coarsely chopped lemon zest

Directions:
1. Beat eggs and oil together. Stir sugar, flour, vanilla, cinnamon, baking soda, baking powder, salt, walnuts and raisins together. Blend in the egg mixture and add the coarsely grated squash.
2. Pour the dough in a baking tin and bake at 175 C (347 F) for 1 to 1 1/2 hour. Let the cake cool, remove from tin and decorate with icing and coarsely grated lemon zest.
