Curd cheese bread
Ingredients:
50 g yeast (25 g if dry)
250 ml water
200 g curd cheese
3 tbsp oil
2 tsp salt
200 ml cracked wheat
200 ml whole grain flour
700 ml white flour
Sprinkling:
egg
cracked wheat

Directions:
1. Dissolve the yeast in the water and add curd cheese, oil, salt and grains. Stir in the whole grain flour and then the white flour a little at a time while kneading. The dough must be soft but not too sticky. Knead well, ideally for 15 minutes. Leave to rise for one hour.
2. Knead the dough again and shape into a loaf. Leave to rise for another 15 minutes. Cut grooves on the surface and brush with egg whipped together with a little water, and sprinkle with cracked wheat. Bake in a hot oven at 225 C (440 F) for half an hour.
