 Ingredients:1 tablespoon caraway seed
1 teaspoon dry mustard
paprika
Sea salt
1/4 cup herb vinegar
1/2 cup mayonnaise
6 Russet potatoes large, washed
1 onion, finely chopped
2 hard-cooked eggs, chopped
1/4 cup olive oil
Directions:1. Cook potatoes until tender; cool, peel, and dice into medium-sized cubes.
2. Combine vinegar, mustard, salt, pepper, and caraway seeds in a bowl. Slowly whisk in oil. Pour over potatoes and let stand for 1 hour. Toss with onion, mayonnaise, and egg.
3. Garnish with paprika. |
