Ingredients: 2 eggs, separated 1/2 cup sweet butter, softened 1/2 cup sugar 1 cup flour, sifted with salt 1/2 teaspoon salt 1/2 teaspoon lemon rind 1/2 teaspoon cream of tartar 1 pound cherries, cut in half, or Italian plums cut in quarters Directions:1. Combine butter, sugar and egg yolks in a bowl and beat until very light and fluffy. 2. In another bowl add cream of tartar to egg whites and beat until it forms stiff peaks. 3. Fold in flour alternately with egg whites into butter, sugar, egg yolk mixture. 4. Spoon out batter on a baking sheet 1/2 inch thick. Cover with fruit. Bake at 400 degrees for 35 minutes. |
