Topfenschmarren
Ingredients:
1 lb Topfen (Quark)
1 cup all-purpose flour
6 eggs, yolks and whites separated
1/2 cup milk
dash salt
1 tablespoon sugar
rhum-soaked raisins (optional)
Vanilla
unsalted butter to fry

Directions:
In a mixer bowl using the paddle attachment combine the yolks, Topfen, Vanilla, salt and sugar until fluffy. Add flour and milk and beat until smooth. Beat the egg whites until peaks form. Using a rubber spatula carefully fold into the batter along with the raisins. Melt butter in a big skillet, pour in the batter and fry like you would fry pan cakes. Tear into pieces, put onto a plate, dust generously with confectioners sugar and serve with cherry pie filling on the side.
