Greek garlic potatoes
Ingredients:
2 teaspoons balsamic vinegar
1/4 teaspoon Sea salt
1/4 teaspoon Oregano, dried
2 pounds boiling potatoes, peeled, washed, and cut in half
1/2 teaspoon fresh rosemary, chopped
white pepper, freshly ground

Directions:
1. Bring a large pot of salted water to a boil.
2. Place potatoes and garlic in boiling water. Boil for 20 to 25 minutes, or until potatoes are tender.
3. Using a slotted spoon, transfer potatoes to a large mixing bowl and remove garlic. Set potato water aside. Press or mash the garlic cloves, add to potatoes, and combine lightly with a potato masher.
4. Stir in oil, vinegar, rosemary, oregano, salt, and pepper. Add a little hot potato water to adjust consistency, if necessary.
