1 slice of ham
1 red capsicum
3 canned tomatoes
1 clove of garlic
3 tbsp chopped parsley
100 white wine
1. Divide the chicken into 4 to 6 pieces and place in a greased ovenproof dish. Brush with oil and rub the skin with a slice of garlic. Sprinkle with salt, pepper and paprika.
2. Place in an preheated oven at 200 C (390 F) until light golden brown
3. Saute the chopped onions until they are clear. Dice ham, capsicum and tomatoes and add to onions. Leave to simmer for a few minutes and add garlic, parsley and white wine. Simmer for a few minutes further and spread over the chicken in the oven. When the chicken is tender, remove from oven and serve with rice.
