Gratin of salmon on a bed of leeks with rare vos
Ingredients:
3 Tbs. butter
4 leeks (white and light green parts only), thinly sliced and thoroughly rinsed
1/2 onion, thinly sliced
2 garlic cloves, fresh
salt and freshly ground pepper to taste
1/2 tsp. dried thyme
1 c. Rare Vos
4 salmon steaks or firm white fish fillets (5 to 6 oz. each about 1 inch thick)
2 tomatoes, peeled and sliced
3/4 c. grated Swiss cheese or Parmesan

Directions:
1. Preheat the oven to 400 F.
2. Melt the butter in a medium-size skillet over medium heat. Add the leeks, onion and garlic and simmer for 5 minutes over low heat, stirring occasionally. Season with salt, pepper, and 1/4 tsp. thyme and pour the beer over the vegetables. Cook, stirring occassionaly, until softened, about 10 minutes.
3. Spoon the vegetables with their juices in an oven-proof baking dish just large enough to comfortably hold the fish. Arrange half of the sliced tomatoes on top of the vegetables. Add the fish fillets, top with the remaining tomatoes and season with the salt, pepper, and thyme. Sprinkle the grated cheese evenly over the dish. Bake in the pre-heated oven for 35 minutes or until the fish is done. Slide the dish under the broiler for a few minutes or until the cheese is browned and crunchy. Serve at once with boiled new potatoes or rice pilaf.
