Pancakes (eierpfannkuchen)
Ingredients:
250 gr flour (9 oz)
1 level tsp baking powder
2-3 egg yolks
1 tsp salt
3/4 c and 5 tbs (500 ml) milk
2-3 egg whites
about 4 oz (115 gr) fat for frying


Directions:
Sift flour and baking powder into bowl. Beat together egg yolks, salt and a little of the milk. Make a well in the middle of the flour and pour in the egg mixture. Starting from middle, combine egg mixture with flour. Gradually add remaining milk and stir until smooth and free from lumps. Whisk egg whites until stiff and fold lightly into batter. Heat little fat in a frying pan, pour in some of batter and fry on both sides until brown. Put a little fat on the uncooked side of pancakes before turning. Sprinkle with sugar and serve.
