Ingredients: 8 ounces noodles 1/2 pound chickens, sliced 2 tablespoons oil 2 garlic cloves, chopped 1/4 cup oil 1/4 cup peanuts, chopped 1/4 cup cooked shrimp, chopped 1/4 cup liquid hot pepper sauce 4 tablespoons soy sauce 1/4 cup sugar 1/4 cup lime juice 4 cups chicken broth 2 cups bean sprouts 1/2 cup cilantro, chopped Total time: 1 hrs 30 mins
Directions:In a bowl combine chopped garlic cloves and 2 tablespoons oil and allow to marinate for 1 hour. Prepare noodles according to the package directions. In a large skillet stir fry sliced chicken in 1/4 cup oil. Chop or coarsely grind peanuts and lightly toast on a baking sheet. In a large kettle combine the cooked chicken, the peanuts, chopped, cooked shrimp, liquid hot pepper sauce, soy sauce, sugar, the garlic oil, and lime juice. Add chicken broth and bring to a boil. Reduce the heat and add the prepared noodles and bean sprouts. Simmer for 10 minutes. When serving, sprinkle the soup with chopped cilantro. |
