Ingredients: 1 20 ounce can crushed pineapple - drained 1 cup flour 1/3 cup butter melted 1/4 cup and 1/3 cup sliced (not slivered) almonds 1/4 cup and 1/3 cup sugar 8 ounces softened cream cheese 1 egg 1 tsp vanilla 1/3 flaked coconut Directions:Drain pineapple. Combine flour, butter, 1/4 cup chopped almonds, and 1/4 cup sugar until crumbly. Press into 9 inch pan. Bake at 350 for 12 min. Beat cream cheese, egg, 1/3 cup sugar, vanilla, and pineapple. Pour over crust. Top with coconut and 1/3 cup almonds. Cool on wire rack. Refrigerate at least 2 hours before cutting into bars. RETURN TO OVEN AND CONTINUE BAKING FOR AN ADDITIONAL 35 TO 40 MINUTES.
