Ingredients: 500ml whole wheat flour 10ml baking powder 1ml baking soda 2ml salt 5ml ground cinnamon 125g butter 250ml brown sugar 2 eggs 4 large, ripe bananas, mashed 125ml chopped walnuts (optional) 2ml vanilla extract
Directions:Sift flour with baking powder, baking soda, salt and cinnamon. Cream butter and brown sugar until light. Add eggs individually, beating well between additions and adding 5ml of the flour mixture with each egg. Add four mixture to creamed mixture alternately with bananas, beating well until smooth. Stir in nuts (optional) and vanilla. Pour into lightly oiled and base-lined 26 x 9 x 7cm loaf tin. Bake at 180C for 50 to 60 minutes |
