Ingredients: You need plantain bananas. These are the large cooking bananas that you can often find in Cuban specialty stores, or anywhere that Latin Americans buy their food supplies Directions:Slice green* plantain very thin and dip in hot oil in a frying pan. Flatten these slices with a mallet, adding a little salt, until very thin. Fry in a small amount of oil in a frying pan until crisp. They will resemble a potato chip. Drain on absorbent paper. Alternately, you can slice the plantain from end to end, or if the plantain is very large, diagonally, to make longer strips. Cook the same way as the circles above. *this recipe will not work if the plantains are ripe |
