Ingredients: 3/4 cup Becel Light margarine (or other soft margarine) 1 cup white sugar 2 eggs 1 teaspoon vanilla extract 1 cup plain, fat-free yogurt (or regular plain) 2 cups flour 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon salt Topping: 2 tablespoons brown sugar 1 teaspoon cinnamon
Directions:Combine the brown sugar and cinnamon. Set aside. Cream margarine, sugar, eggs and vanilla together in a large bowl. Add yogurt and blend well. To this, add flour, baking soda, baking powder and salt. Blend only until all ingredients are moistened - do not over mix! Fill muffin tins half full with batter. Sprinkle half of the cinnamon sugar mixture over and then top with remaining batter. Sprinkle the remaining cinnamon sugar over the top. Bake at 400 degrees F for 20 minutes. |
