Ingredients: 3 cups flour 1 1/2 cups salad oil 1 1/2 cups sugar 1 1/2 teaspoons vanilla 1 teaspoon salt 1 can (8 ounces) crushed pineapple 1 teaspoon soda 1 cup chopped pecans (optional) 1 teaspoon cinnamon 2 cups chopped bananas 3 beaten eggs Frosting: (double for round pans) 1 package (8 ounces) softened cream cheese 1/2 cup butter 1 pound powdered sugar 1 teaspoon vanilla
Directions:Combine dry ingredients. Add eggs and oil. Stir until moistened. Do not beat or cake will be tough. Stir in vanilla, pineapple, pecans and bananas. Pour in well-greased 9 X13-inch pan or 28-inch round pans. Bake at 350 degress F for 55 minutes for 9 X 13-inch pan or 30-35 minutes for round pans. Cool at least 15 minutes before frosting. Beat frosting ingredients together and frost cake. Sprinkle chopped pecans on top if desired. |
