Ingredients: Cake: 1 box spice cake 1 small box instant vanilla pudding mix 1 cup cooked and mashed sweet potatoes 4 eggs 1 cup water 1/2 cup oil Cream Cheese Frosting: 1 package (8 ounces) cream cheese, softened 1/2 cup butter or margarine, softened 1 package (16 ounces) powdered sugar 1 1/2 teaspoons vanilla Directions:Combine all the ingredients in a large bowl. Beat well with an electric mixer until combined. Pour into a greased and floured 13x9-inch baking pan. Bake at 350 degrees F for 35 to 40 minutes. Cool completely and then frost with the Cream Cheese Frosting. To make frosting, beat the cream cheese and butter together with an electric mixer until creamy. Add the powdered sugar and vanilla and continue to beat until fluffy. |
