1 1/2 lbs Chicken breasts, boned
1/3 cup Peanut oil
2 cup Celery, coarsely chopped
2 cup Onions, coarsely chopped
1 cup Bamboo shoots, chopped
1 cup Water chestnuts, sliced
1/4 cup Water
1/4 lbs Sugar peas
Soy sauce to taste
1 tsp Cornstarch
2 tbsp Water
1/8 lbs French-fried blanched
Plus extra almonds for
1 Cut chicken in ?-inch cubes.
2 Brown quickly in hot oil in a large skillet.
3 Add next 5 ingredients, cover, and cook about 7 minutes.
4 Scatter sugar peas on top, cover, and cook 5 minutes.
5 Add soy sauce.
6 Mix cornstarch and water; add to skillet and cook, stirring, just until mixture is slightly thickened and glazed.
7 Sprinkle with almonds and serve.
8 Pass soy sauce and extra almonds.
9 serve with molded rice, and fresh orange slices.
