Ingredients: 2 cup Flour, whole wheat 1 tsp -Salt -Water for mixing Ghee, or oil for shallow -frying FOR FILLING 4 med Potatoes 1 small Onion, grated 1 tsp -Salt 1/2 tsp -Pepper 1 tsp Coriander leaves, chopped
Directions:1 Sift flour with salt. 2 Slowly add water. 3 Mix well. 4 Make a stiff dough. 5 Cover with a damp cloth for 20 minutes. 6 Boil potatoes, peel and mash. 7 Add salt, onion, pepper and coriander. 8 Mix well. 9 Divide into 8 portions. 10 Knead dough well until smooth and pliable. 11 Divide into 6 round balls. 12 Flatten each ball slightly. 13 Put one portion of filling in centre. 14 Close up completely. 15 Shape into round balls again. 16 Roll out each ball on a lightly floured board into a round disk 6" (15 cm) diameter. 17 Cook one at a time on a hot griddle over medium heat. 18 Put about 1 or 2 tbsp ghee around the edge. 19 Turn gently. 20 Cook until sides turn golden brown in colour. 21 Serve with yogurt. 22 Vegetarian kheema roti: instead of potato stuffing, used cooked and seasoned vegetarian minced meat (anne"s note: the preface lists "nutri nuggets"; i suspect that this is an indian brand of tvp) for stuffing |
