Ingredients: 2lb (900g) blueberries 3 cups (750ml) yogurt 6 tbsp (90g) sugar
Directions:Reserve a third of the blueberries for decoration and puree the rest in a blender. Pour in the yogurt and sugar and blend again until they are thoroughly combined. Pour the mixture into an ice cream machine and follow the manufacturer`s instructions to freeze. If you do not have a machine, pour the mixture into a suitable container and put it into the freezer for at least 4 hours. After the first 30 minutes, take it out and whisk it to break up the ice crystals, then return it to the freezer. Whisk twice more at half-hourly intervals, then leave the ice cream to become firm. To serve, scoop the ice cream into dessert bowls and scatter the remaining blueberries on top. |
