Ingredients: 4 papayas, peeled and seeded juice of 8 limes 3/4 cup (180g) sugar 1 cup (240ml) water Directions:Puree the papayas in a blender, add the lime juice, blend again, and set aside. Put the sugar and water into a saucepan, bring to a boil, then cook over low heat until it is syrupy - a drop poured onto a plate will stay perfectly round. Allow it to cool, then add it to the papaya puree. Pour the mixture into an ice cream maker, then follow the manufacturer's instructions to freeze. If you do not have an ice cream machine, pour the sorbet mixture into a container and put it in the freezer for at least 4 hours. After the first 30 minutes, take it out and whisk it, then return it to the freezer. Whisk twice more at half-hourly intervals, then freeze the sorbet until it is firm. |
