Ingredients: 2 Tbsp. margarine 2 Tbsp. flour 1 1/4 c. milk 1 (4 oz.) carton semi-soft natural cheese 8 oz. bulk pork sausage 1/4 c. chopped green onion 1/2 c. chopped green olives 1 c. drained cooked peas or corn 12 eggs, slightly beaten snipped tomato wedges parsley
Directions:Place butter in a glass measuring cup (1-quart). Microwave on High for 45 seconds. Stir in flour; microwave on High for 30 seconds. Whisk in milk. Microwave on High for 2 1/2 to 3 minutes. Stir in cheese. Microwave on High for 1 minute. Stir until smooth. Set aside. In 12 x 7-inch baking dish combine sausage and green onion. Microwave on High for 5 minutes or until sausage is browned, stirring twice. Drain well. Stir in olives, corn or peas and eggs. Cover with vented plastic wrap. Microwave at 70% for 8 minutes or until eggs are just set, stirring 3 times. Fold in cheese sauce. Cover with plastic wrap; refrigerate overnight. To serve, vent plastic wrap. Microwave at 70 degrees for 10 minutes, stirring twice. Top with tomato wedges. Microwave at 70 degrees for 2 to 3 minutes or until tomatoes are warmed. Sprinkle with parsley. |
