Ingredients: 8 lg mushrooms, stemmed breadcrumbs 1 1/2 oz butter fat, for frying 2 ea eggs parsley Directions:Cut off heads of mushrooms and remove skin. Put into boiling water with a little lemon juice to keep mushrooms white and simmer until tender. Peel and chop the stalks. Cream butter with egg yolks, add chopped mushroom stalks and if necessary thicken with breadcrumbs. Fill heads of mushrooms with mixter and bake in greased dish at 350F for 15 minutes. Serve hot garnished with a twig of parsley and accompanied by rolls or potatoe salad. |
