Ingredients: 3/4 lb onion, peeled, sliced 1/4 c flour 2 T butter for frying 1 pn pepper, black salt 2/3 c cheese, grated 6 c water 1 ea bread roll 2 T butter for roux 1 tb shortening Directions:1. Fry onion in butter until tender. Cover with salted water and boil for 30 minutes. Put through seive or puree in blender or processor. 2. Prepare light roux from butter and flour. Dilute with pureed onion. If necessary, add water and simmer for 30 minutes. 3. Flavor with pepper and grated cheese. Serve with croutons made from bread roll. |
