Ingredients: 1 1/4 lb potatoes, peeled 3/4 lb leeks, sliced 6 c water 2 oz lard salt 1 ea egg yolk 1 c milk, hot Directions:1. Cover potatoes with water and boil until tender. Pour off water - reserving. Mash potatoes with hot milk 2. Fry leeks in lard until tender. Add to mashed potatoes. Add potato water and if necessary, a little more. Mix well and simmer for 30 minutes. 3. Add egg yolk mixed with a little water and heat thoroughly without boiling. |
