| Ingredients: 4 cups corn, canned or fresh 1/2 c. whole millk 2 tbs. olive oil 1 small onion finely minced 1/2 c. grated parmesan cheese 4 eggs Directions:In a blender, mix milk and corn, slightly until corn is slightly pureed. Fry onion in oil at low heat until translucent, and then set aside to cool. Beat eggs together with a pinch of salt and add half of the grated cheese. Add egg mixture to corn mixture. Grease a 9-inch pie pan with butter or margerine. Pour the mixture into the pan and top with remaining cheese. Bake in an oven at 350 F for 45-50 minutes. Serve hot or cold. |
