Ingredients: 1 teaspoon cumin seed 2 cinnamon sticks 1 1/4 cups Basmati rice 6 whole cloves 1 tablespoon Pure Ghee 4 tablespoons sugar 2 1/2 cups water salt black peppercorns
Directions:1. Rinse and drain the rice. 2. In a heavy, deep pan, heat the ghee over a medium flame and add the sugar. 3. As the sugar turns golden brown, add the cumin seeds, cinnamon, cloves, peppercorns, and bay leaves. Cook for a minute more. 4. Add rice to the pan and mix for 2 minutes. If sugar begins to burn, add water to stop the caramelization. 5. Add the water and salt and bring to a boil. Cover and simmer for 40-50 minutes, until grains are tender. Add additional liquid, as necessary. Remove from the heat and leave the pan undisturbed for 5 minutes. 6. Fluff rice and serve. |
