Ingredients: 2 lbs. beef top round, sliced thin and pounded 1/2 head caramelized garlic 2 Tbsp. olive oil 1/4 cup green olives, chopped 1/4 cup bread crumbs 1 cup artichoke hearts, rough chopped 2 Tbsp. pine nuts 1/2 cup onion, chopped 2 pints tomato sauce
Directions:Preheat a saute pan. Add olive oil, onion and garlic. Sauté until light brown in color. Add bread crumbs and pine nuts and toast until light brown. Remove from pan and cool. Add artichokes and place filling on beef slices. Roll up the beef and secure with butcher`s twine or skewers. Preheat grill or a braising pan. Sear meat on all sides until light brown. Add 2 pints of tomato sauce and simmer for 1 1/2 hours or until tender. |
