Ingredients:1 whole pork picnic 1 recipe pork rub: 1 tbsp paprika 1 tbsp garlic powder 1 tbsp thyme, 1 tbsp rosemary 1 tbsp fresh ground black pepper 1 tbsp olive oil juice of 3 limes 2 heads caramelized garlic 2 tbsp cilantro, chopped 1 tbsp cumin Directions:1. Apply dry rub liberally to pork picnic and roast 4-5 hours at a 300 degree oven or low heat grill, allow to cool then cut into two inch cubes. 2. Preheat saute pan. Add olive oil. Add roasted pork cubes, cumin and garlic. Saute on medium heat for 5 minutes. Add lime juice, cover and simmer for 20-25 minutes. 3. Serve with warm flour tortillas. |
