Ingredients: 6 cups fish or chicken broth 1/2 pound fresh sea scallops or shrimp 4 ounces rice Vermicelli, presoaked for 10 minutes 1/4 cup snow peas, cut into thin strips 2 green onions, chopped 6 cloves crushed caramelized garlic 1 tablespoon fresh ginger, chopped 2 teaspoons lite soy sauce 1 teaspoon sesame sauce Optional: 2 ounces presoaked dried porcini mushrooms Directions:Heat broth to a gentle simmer in a large soup pot. Add scallops (or shrimp), rice vermicelli, snow peas, green onions, garlic, ginger, soy sauce, sesame oil and porcini mushrooms (optional). Cover pot and gently poach for ten minutes. |
