Ingredients: 3 cups precooked turkey, skin removed, deboned and chopped 1 cup kielbasa or smoked sausage, chopped 1 T. olive oil 1 cup chopped onion 8 cloves caramelized garlic 1 t. thyme 1 t. rosemary 2 cups potatoes, washed and chopped 1 28-ounce can plum tomatoes 1 16-ounce can corn w/juice 1 12-ounce can cannelloni beans, drained and rinsed 1 t. Tabasco 1/4 t. nutmeg Directions:Preheat a large soup or stock pot. Add olive oil, onion, garlic. Saute till lightly brown. Place turkey and kielbasa sausage in pot and cook for 3-4 minutes. Add thyme, rosemary, potatoes, corn, tomatoes, beans, Tabasco and nutmeg. Cover pot, and simmer for 1 1/2 hours stirring occasionally. Add fresh ground black pepper to taste. |
