1 Tablespoon olive oil
12 eggs or egg substitutes, well beaten
8 ounces Andouille sausage, chopped
1/4 onion, chopped
6 cloves caramelized garlic
1 cup cooked shredded potato
1 red pepper, chopped
1. Preheat oven to 400 degrees and 10 inch non-stick skillet to medium temperature.
2. Spray the 10 inch non-stick skillet with cooking spray. Add olive oil, onion, garlic, red pepper and sausage. Cook for 2 minutes. Add potatoes and cook for 2-3 minutes longer. Pour beaten eggs into pan and stir to mix. Lower the temperature. Cook 4-5 minutes allowing the eggs to set. Place in 350 degree oven for 5 more minutes or until eggs are completely cooked.
