Ingredients: 1 tbsp oil 2 tsp mustard seeds 2 tsp sesame seeds 225 gm Basmati rice 2 tsp chili powder pinch of turmeric 1 tsp ground coriander 1 1/2 tsp garam masala 15 ml water 1 medium cauliflower cut into florets 1/2 red capsicum cut into strips 1/2 green capsicum cut into strips 400 gms canned tomatoes 1 tbsp ginger garlic paste salt to taste
Directions:Place oil mustard and sesame seeds in a large bowl, heat on high for 1 minute. Add rice mix well and cook on high for 2 minutes. Mix the chili powder coriander powder, garam masala and turmeric into a paste with the 1tbsp of water and mix the paste with the rice. Add all the vegetables except tomatoes and cook on high for 2-3 minutes. Drain the tomatoes and reserve the juice. Add tomatoes to the rice mixture and stir well. Add enough boiling water to tomato juice to make 550 ml of water and add it to rice and mix well. Cook for 20-22 minutes stirring occasionally. |
