Ingredients: 1 cup basmati rice 100 gms peas, carrots, cauliflower 1 tbsp ghee 1 inch ginger 8 flakes garlic 3 green chillies 1 tomato 1 onion 1 tsp coriander powder 1/2 tsp cumin seed powder 2 bay leaves 3 cinnamon sticks 1/2 tsp caraway seeds 1/2 cup chopped coriander and grated coconut Directions:Shell peas, chop cauliflower and carrots. Grind ginger, garlic and green chillies to a fine paste. Quarter tomato. Slice onion very fine lengthwise. Soak-rice for 15 minutes, drain. Heat ghee on HIGH for 30 seconds. Add bay leaves, cinnamon, caraway seeds, onion and ginger garlic paste. Microwave on HIGH for 2 minutes stirring in between. Add vegetables and rice. Stir well and Saute for 2 minutes. Add water as in conventional cooking and salt. Cover and Microwave on HIGH for 18 minutes. Let stand for 2 minutes. Garnish with coconut and coriander mixture. |
