Ingredients: 1/4 cup olive oil 1 1/2 cups brown rice 1/2 cup dried apricots, slivered 1/2 cinnamon stick 8 cloves 4 black peppercorns 1/4 teaspoon cardamom 3 cups water 2 medium onion, sliced 1/3 cup raisins 1/2 cup pine nuts
Directions:1. Heat half the oil in a medium saucepan. Add the rice and saute for 5 minutes, stirring gently. 2. Add the apricots, cinnamon stick, cloves, peppercorns, cardamom, salt and pepper (to taste), and the water. Bring to a boil, then cover tightly and leave to simmer for 45 minutes. Turn off the the heat and leave covered. 3. In a medium frying pan, heat the remaining oil over medium heat. Fry the onions until soft and slightly browned (10 minutes). Stir into the rice mixture. |
