Ingredients:1/2 cup skim milk 2 tablespoons lemon juice 4 firm white fish fillets 1/4 teaspoon black pepper 1/4 cup chopped onions 3/4 cup low-fat sour cream 2 tablespoons chopped fresh parsley 2 tablespoons chopped pimentos 1 teaspoon Worcestershire sauce 2 dashes Tabasco sauce 1/4 cup grated Parmesan cheese 1 pinch paprika
Directions:Soak fish in milk/lemon juice for at least 30 minutes. Place fish fillets in microwave casserole, thickest portions to the outside. Cover and microwave 3 minutes per pound at 100% power or until fish flakes. Drain liquid that remains. In 2-cup microwave measure, cook onion, covered, for 1 minute at 100% power. Stir in sour cream, parsley, pimiento, Worcestershire sauce and Tabasco sauce. Top fish with sour cream sauce. Heat at 50% power for 8-15 minutes until very hot, but not boiling. Sprinkle with Parmesan and paprika. |
