Ingredients: 1/2 lb dry lentils ( sort thru for stones and rinse) 1/2 lb raw baby carrots small onion (chopped thin) 4 c water Directions:In pot, sautee onion in small amount of olive oil until translucent. Add rest of ingredients. Bring to a boil and then reduce heat to simmer for 1-11/2 hrs until lentils are soft. Cool, then puree. Add more water for thinner consistency. Makes 4 icecube trays full. |
