1 (12-oz.) package STOUFFER`SR Harvest Apples, defrosted according to package directions
1 (22-oz.) can sweet potatoes or yams, drained
2 tablespoons butter
1 tablespoon sugar
1/2 teaspoon vanilla extract
1/4 teaspoon ground nutmeg
1.Preheat oven to 400?F. Lightly grease a baking sheet.
2.Whip sweet potatoes until smooth in a large mixing bowl. Add eggs, butter, sugar, vanilla extract and nutmeg; beat until well combined. Season to taste with salt.
3.Spoon mixture onto prepared baking sheet, forming 6 mounds, 2 inches apart. Make a depression in each mound using back of a spoon to form a shell. Fill centers of shells with escalloped apples.
4.Bake for 30 minutes.
